Ah! I am so delighted you have stumbled across this winning recipe. You are in good hands. It is one of the most flavorful, comforting and somehow still healthy meals I’ve shared. I hope you enjoy this as much as I do!
Total Preparation Time: 1 hour 15 minutes // Serves: 3 (double for more!)
- 3 chicken breasts
- 1/8 cup butter
- 1/4 cup wheat flour
- 1 small white onion, chopped
- 2 stalks celery, chopped
- 1 cup chopped sweet peppers (variety of colors, can sub bell peppers)
- 1 teaspoon garlic, minced
- 1 1/8 cups hot water
- 1 cup sliced baby bella mushrooms
- 1 tablespoon buffalo sauce
- salt and pepper
To begin, brown chicken breasts in frying pan (I used Pam on the bottom of my skillet) over low-medium heat.
In a separate large skillet (with some depth), heat butter on low-medium heat and stir in wheat flower to create a dark brown colored paste.
Add chopped onion, celery, peppers and garlic to the paste. Stir for ~5 minutes (until veggies are soft).
Add the hot water to mixture, while stirring.
Lastly, mix in browned chicken. Top it off with a dollop of buffalo sauce and a sprinkle of each salt and pepper!
Now for the difficult part, simmer on low for 60 minutes.
As your meal prepares itself, place 1 cup of dry wild rice into a sauce pan with 1 1/2 cups water. Bring to a boil, simmer for 40 minutes or until you achieve your desired texture.
When the timer finally rings – your skillet should contain a thick-appearing gravy smothering your chicken and veggies:
Now go on, scoop a hearty portion of rice onto your plate and smother in chicken mushroom gravy goodness!

I think the reason I love this recipe is because it is basically a remix of chicken and wild rice soup (my all time favorite soup). I obsess over the combination of flavors this recipe takes advantage of (clearly). I am already ready to make this again!
