Parmesan Zucchini Corn Salad

This Thanksgiving I decided it was time to contribute a dish for the passing! I knew there would be plenty of savory, hearty dishes at the table including mashed potatoes, green been casserole, gravy, and pies galore! I wanted to make sure there would be something GREEN on the table this year (okay and a little yellow, too! no packer pun intended). Everyone needs green in their day, even on Thanksgiving! It always makes my plate feel a little more balanced, and my tummy a little less puffy after the meal. A win-win! I took this one into my own hands. Sure enough, it was a hit not just for my belly, but the fam loved it too.

This recipe is simple, flavorful, and takes little time. It would make a perfect dish for any potluck, a Monday evening, or let’s say, Thanksgiving? πŸ™‚

4 large Zuccini (6-7 small)
1 cup corn (frozen or off the cob)
2 tablespoons olive oil
2 cloves garlic (minced)
1/4 tspn dried basil
1/4 tspn dried oregano
1/4 tspn dried thyme
Lemon juice, salt&pepper to taste
2 tablespoons chopped fresh cilantro
Parmesan cheese to taste (I used about a cup)


Begin by chopping zucchini and set aside. Add olive oil and garlic to frying pan and place on medium heat for about 3 minutes. Add Zuccini, corn, basil, oregano, thyme, salt and pepper to pan. Heat on medium for 5-7 minutes (until Zucchini become soft). Add lemon juice and remove from hear. Stir in Parmesan and cilantro and you’ve got yourself a healthy delicious side dish! Enjoy ☺️
